Natrium sorbat adalah garam natrium dari asam sorbat. Senyawa ini adalah padatan putih yang tidak stabil. Tidak seperti garam asam sorbat lainnya seperti kalium sorbat (E202) dan kalsium sorbat (E203), penggunaan natrium sorbat sebagai bahan tambahan pangan dilarang di Uni Eropa karena berpotensi menimbulkan efek genotoksis.[2][3] Nomor E-nya adalah E201.
