Nobuatsu Aoki (lahir 31 Agustus 1971). Ia menjalani debut balap GP Motor di kelas 250cc pada tahun 1990 GP Jepang. Ia berhasil merebut juara seri pertama di GP Malaysia kelas 250cc tahun 1993.

Tahun 2000 ia membela tim Telefonica Movistar Suzuki di kelas 500cc bersama Kenny Roberts, Jr. Mereka menggunakan motor RGV 500 2 tak. Di musim ini ia berada di posisi 10 klasemen akhir GP 500cc dengan poin 116.

Pada tahun 2002 Nobu direkrut oleh tim Proton KR untuk mengendarai motor KR Mk.3. Di musim ini ia meraih posisi terbaik saat finis posisi 6 di sirkuit Le Mans, GP Prancis.

Musim 2003 ia masih di tim Proton KR dan berganti menggunakan motor 4 tak, Proton KR V5. Ia berada di posisi ke 21 klasemen akhir dengan 19 poin.

Tahun 2004 ia tetap di tim Proton KR untuk melanjutkan riset dan pengembangan motor KR V5. Di klasemen akhir MotoGP 2004, Nobu berada di peringkat ke 21 dengan 10 poin.

Sejak tahun 2005 menjadi test-rider untuk tim Suzuki MotoGP.

Nobuatsu Aoki adalah kakak kandung dari mantan pembalap Repsol Honda, Takuma Aoki dan mantan juara dunia kelas 125cc dunia, Haruchika Aoki.
