Tom Collins

En Tom Collins er en Collins-cocktail lavet af gin, citronsaft, sukker og danskvand. Denne "gin og mousserende lemonade"-drink serveres typisk i et Collinsglas med is og pyntes med et kirsebær. En alkoholfri "Collins mix" mixer produceres også og nydes af nogle som en sodavand.

Drinken er en variant af den lignende John Collins.

Den tidligste publikation af en Collins – samt af en Fizz-opskrift – findes begge i samme bog: den amerikanske bartender og forfatter Harry Johnsons værk fra 1882, Harry Johnson's New and Improved Bartender’s Manual, or How to Mix Drinks of the Present Style, in English and German. Bogen indeholder en Tom Collins, der kræver Old Tom gin, og en John Collins, der kræver Holland Gin, sandsynligvis det, der i dag er kendt som genever.
