Aemono (和え物/あえもの) are dressed salads in Japanese cuisine. Aemono may be put into the category of sunomono due to technically being a salad, but unlike most sunomono it tends to have thicker dressings that set it apart. Raw/blanched-then-cooled vegetables, fish, poultry, etc. may be used as ingredients. Ground toasted sesame seeds(gomae), miso, tofu, egg yolk and the like may be used as dressings. Additionally soy sauce, rice vinegar, sugar etc. may be added to the dressing, but they are more like seasonings rather than a main ingredient.[1][2]
