Miniat is an American food manufacturing company headquartered in South Holland, Illinois. Operating under Miniat Holdings LLC, the company manufactures fully cooked, value-added protein products for foodservice and consumer packaged goods customers.[1] Miniat traces its origins to Chicago's Union Stock Yards in 1896. Miniat Holdings also owns South Chicago Packing, a manufacturer of edible animal fats, oils, and shortenings.[2]

History

Miniat traces its origins to 1896, when founder Michael Miniat established the family business in Chicago after immigrating from Lithuania. The business supplied wholesale cuts of meat from Chicago's Union Stock Yards to local butchers.[3][4]

By the 1940s, the business had expanded throughout the Chicago area, and Ronald Miniat joined the family business during the early 1950s. In 1958, Ed Miniat Sr., Ed Miniat Jr., and Ronald Miniat incorporated the modern company as Ed Miniat Incorporated. As Chicago's stockyard system declined, the company shifted its focus toward value-added protein processing and food manufacturing.[1][3]

In 1972, the Miniat family acquired South Chicago Packing, expanding into edible animal fats, shortenings, and specialty oils.[3] During the 1980s, members of the Miniat family expanded into value-added meat production using water-based cooking techniques that they later identified as sous vide. The process became a foundation of the company's protein manufacturing operations.[3][5]

In February 2020, Ed Miniat LLC acquired a meat-processing facility in Carrollton, Georgia, establishing its first manufacturing operation outside Illinois.[6] In June 2024, the company announced a $7.8 million expansion of the Carrollton facility.[7]

Operations

Miniat manufactures fully cooked, value-added protein products for foodservice and consumer packaged goods customers, primarily using sous vide cooking and other food-processing technologies.[5]

The company develops customized protein products for restaurant chains and institutional customers and markets an off-the-shelf product line under the Miniat Gold Standard name. The Carrollton facility also provides steam cooking, open smoking, and kettle cooking capabilities.[5]

Facilities

South Holland, Illinois

Miniat's headquarters is located in South Holland, Illinois. Its 165,000-square-foot South Holland facility opened in 1995 and houses the company's Innovation Center, Culinary Center, Research and Development Laboratory, and Pilot Plant.[5]

Carrollton, Georgia

Miniat acquired the Carrollton manufacturing facility in February 2020. The site serves the company's southeastern customer base and provides additional production capacity for cooked protein products.[7][6]

Corporate structure

Miniat operates as an operating company of Miniat Holdings LLC, a privately held parent company headquartered in South Holland, Illinois. The holding company remains family-owned. According to a 2018 company announcement, the combined Miniat companies employed more than 900 people at that time.[2]

South Chicago Packing

South Chicago Packing LLC is another operating company under Miniat Holdings. Based in Chicago, it manufactures edible animal fats, oils, and shortenings for foodservice, retail, and industrial customers. Since its acquisition by the Miniat family in 1972, the company has expanded its product portfolio to include animal cooking fats, tallow products, and specialty oils.[3]

Products

Miniat manufactures value-added protein products including beef, pork, poultry, and prepared food products for foodservice and consumer packaged goods markets. Its product portfolio includes custom protein solutions, fully cooked meats, sous vide products, and offerings marketed under the Miniat Gold Standard line.[5]
