Acetat er eddikesyrens korresponderende base ("syrerest"). Acetat dannes ved deprotonisering af eddikesyres carboxylsyregruppe. Det er en anion med den kemiske formel CH3CO2.

Salte, hvori acetationen indgår, betegnes acetater. Estere af eddikesyre har tillige suffikset "-acetat", f.eks. ethylacetat.
