Cream tubes (Bulgarian: фунийки с крем, Romanian: Rulouri, Russian: Трубочки с кремом, Polish: Rurki z kremem) is a buttery, flaky viennoiserie bread roll, filled with pastry cream. Rosemary is sometimes added to the cream to flavour it.[1]
They can be made from layered yeast-leavened dough. The dough is layered with butter, rolled and folded several times in succession, then rolled into a sheet, in a technique called laminating. The process results in a layered, flaky texture, similar to a puff pastry.
One 17th century recipe involved baking the Cream Tubes as wafers and rolling them into shape once cooked.[1]
In Poland, cream tubes are often sold through kiosks and small street food stalls.[1]
